Caramelized Onion Stuffed BBQ Meatloaf

Oh yeah, I went there. I’ve stuffed burgers before. Twice. And it’s no secret that I love caramelized onions (over and over and over).

I really feel like the meatloaf gets a bad rap. I mean, it shares its moniker with this guy:

And though this is unrelated, this cracks my shit up every time:

And it’s not like it’s called Giant Majestic Pile of GrassFed Beef and Pork Cooked Lovingly. Nay. It’s called a LOAF. I’d imagine anything called a loaf automatically brings to mind images of Al Bundy on the couch with his hand in his pants. But we need to break free of the chains. (Insert Wilson Phillips chorus here ) (Here, have it stuck in your head all day.) (Some day somebody’s gonna make you wanna turn around and say goodbye…((sa-aay goodbye)))(Until then, baby, are you gonna let them hold you don’t make you cry?)(You’re welcome.)

I work from the local coffee shop a couple of days a week and today was one of those days. And any of you who use caramelized onions in a recipe know that it’s not a quick process. And since I wasn’t going to be home all day, what’s a girl to do? Enlist the crockpot! I put two large vidalias, 1/2 stick of butter, and some salt in the crockpot, set it on 8 hours and voila! (or if you’re the dumb girl I knew in college who stupids-up my Facebook timeline: “Wallah!”) (Yes, I’m not even making that up.) caramelized onions!

  1. I happen to love meatloaf….especially sweet ‘n’ sour meatloaf, mmm.

    The huge pile of caramelized onions in this post actually isn’t what caught my attention (I use them lots and in large amounts myself, hehe), but actually how you built the meatloaf. I’m going to have to try this way of building a nice well to put the filling in myself. Sounds yummy.

    I make a whole crock pot full of onions, then pack them tightly in a jar in the fridge. They last a long time and are readily available for sandwiches (grilled cheese with caramelized onions, drool), hamburgers, or scrambled eggs.

    A friend of mine consistently says ‘pacific’ instead of ‘specific’. Cute when my three year old says it, not so cute in an adult with a college degree.

  10. This was so good! The only issue is I wanted to eat all of the onions instead of adding them to the meatloaf. Love the texture and flavor that the walnut meat added compared to breadcrumbs. Thanks!

      Thanks!! I know, I have the same problem with the onions! Sometimes I use the crockpot to make a huge batch of caramelized onions and just put them in a jar in the fridge to put on everything!

    This was amazing. I churched it up a bit and added bacon to the top of it. Only four strips and then brushed it with my BBQ sauce and I over cooked it a bit but it was just in delicious.
