Guys, it’s hot here. And yes, you’re right. I WAS just complaining how cold it was here. You know what I’ve come to figure out a year after moving to Iowa? It has no fall or spring. It just goes from winter to summer to winter to summer. Today it’s over 100 degrees and I could only sit outside for 20 minutes today reading my book before I literally sweat through my sun dress. Sexy huh?
So on days like this, the last thing I want to do when I walk in the door at 6:30 am after a 5:30 am crossfit class – where it was ALREADY 80 degrees – is cook or have a hot breakfast. I love eggs as much as the next omnivore, but I just cannot scramble one more egg once the mercury reaches “Stay the hell inside, stupid.”
I concocted this because I they accidentally gave me a hot coffee yesterday instead of the iced latte I ordered and I needed caffeine too badly to wait for them to make me the correct one. So I took it home and invented this. I used honey to sweeten this because it’s my choice, so if you choose to use another form of sweetener (stevia, agave, etc.), add it slow and to your own personal taste. If you don’t have a high powered blender like a Vitamix, you may want to leave the shredded coconut out. Also, I added chia seeds in the first batch because I add them to everything but it foamed up too much, so I recommend leaving it out if that bothers you.
Recipe: Almond Joy Frappuccino
- 2 c. ice (make coffee iced cubes if you think ahead)
- 8 oz black coffee, chilled
- 1/3-1/2 c. coconut milk
- 2 tsp. cocoa powder
- 2 tbsp. honey, or your choice of sweetener
- 2 tbsp. unsweetened shredded coconut
- 1/2 tsp. almond extract
- sliced almonds (for garnish)
- Put ice in blender first
- Add all other ingredients and blend until smooth.
- Top with slivered almonds.
