My husband hates avocados almost as much as I hate mushrooms. Which on a scale of 1-10 would be an ELEVENTY BILLION. I mean, for Christmas sakes people, they’re FUNGUS and taste like DIRT and WORMS and ugh. And I keep trying them like a giant ass, hoping that one day my taste buds will change and I will have a whole new culinary world open up to me. I mean, when I was 14 I didn’t like sushi and now I could eat it every meal.
So I try. Just doesn’t happen.
So I GET why my husband doesn’t like avocados – the texture bothers him and unless it’s masked in something (like the said delicious non-primal sushi rolls we love so much). But me? I could eat a whole one every day. So I tend to eat them for or with lunch while he’s not home and we don’t share meals.
I came up with this 100% primal lunch which is EASY and Yummy and HAS BACON. I mean, bacon pretty much makes everything better, right? Cut your forehead? EAT BACON. Date stood you up? BACON. Kids yelling and fighting? BACON. See? Bacon cures all.
I suppose this is very dip/topping like and you could use it as such. I imagine it would be great on an omelet or as a dip with Mark’s Almond Meal Crackers (which are SO good and SO addictive). However, I’m gross and I eat it right out of the bowl.
BLT in a Bowl. With A instead of L.
What you need:
- Bacon! Three slices, cooked crispy, cooled and chopped
- 1 avocado, sliced and diced
- 1 tomato, diced
- 1 tsp mayo (optional) (Use your own homemade kind to make it 100% primal)
- fresh ground pepper
- quick squeeze of lemon/lime juice
What you do:
Mix it all together!
The more mayo you add (if you choose to use it at all) the more dip-like and liquidy it will become. If you want to share or make it as a dip to be served, just double/triple the recipe.
(Note: I realize this has no L in it but rather a G, so technically it would be a BGT in a bowl but that’s just not right. Ha)
